Ingredients:

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar plus 1 tablespoon, divided*
  • 2 large eggs • 1 tsp vanilla
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1½ cup fresh plums halved (approx.)
  • Juice from ½ lemon
  • 1 tsp cinnamon

Follow along as we take you through each step of the process, from slicing the juicy plums to mixing the perfect batter. This recipe is simple and incredibly delicious, making it one of our go-to desserts!

    Steps:

    1. Preheat the oven to 350°F and butter the inside of a 9 inch pan or pie plate.
    2. In a mixing bowl, cream the butter and 1 cup of sugar until light and fluffy.
    3. Add in the eggs, one at a time, ensuring each egg is fully incorporated, followed by the vanilla.
    4. Whisk the flour, baking powder and salt in a small bowl until combined. Then mix into the butter-sugar mixture just until combined.
    5. Spread the batter into the pan, and smooth out the top.
    6. Arrange the halved plums cut-side-down, then use your fingers to gently press them into the batter.
    7. Squeeze the lemon juice over the fruit, then mix the remaining tablespoon of sugar and cinnamon, and sprinkle over the top.
    8. Bake for about 45 minutes to an hour, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
    9. Allow the cake to cool on a rack for at least 20 minutes prior to cutting. We prefer to serve this cake warm with a scoop of vanilla ice cream!
