Bakery Style Peanut Butter Cookies

Ingredients:

  • ½ cup unsalted butter (room temp)
  • ½ cup packed light brown sugar
  • ½ cup granulated sugar
  • ½ cup (120 g) smooth peanut butter
  • 1 large egg
  • 1 tsp vanilla
  • 1 ¼ cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

Directions:

  1. Preheat oven to 350°F.
  2. Beat butter, brown sugar, and granulated sugar in a bowl until light and fluffy.
  3. Beat in the peanut butter, egg, and vanilla and mix until just combined.
  4. In a separate bowl, combine flour, baking powder, baking soda, and salt and whisk until combined.
  5. Add the dry ingredients into the peanut butter mixture and mix until just combined.
  6. Shape the dough into approximately 2-inch balls (I used a kitchen scale to measure even balls about 45g each).
  7. Add about ¼ cup of granulated sugar and place onto a plate. Roll each ball into the sugar, making sure the top is well coated.
  8. Place each ball sugar side up on a cookie sheet about 2 inches apart. Using a metal fork, make a crisscross pattern squishing each cookie ball to about ½” thick.
  9. Bake cookies for 8-11 minutes until the tops of cookie are set and the edges are starting to brown slightly.
  10. Transfer the cookie sheet to a wire rack to cool completely.
  11. Makes about 12 large bakery style cookies.
Storage: Cookies can be stored in an airtight container at room temperature for 5 days, or store in an airtight container in the freezer for up to 3 months.
