1 cup sugar
¼ cup + 2 Tbs salted butter (cut into approximately 1-inch cubes)
½ cup heavy cream
½ tsp salt
Gather all listed ingredients and place them next to your workspace. Have a heatproof spatula and a wire whisk ready.
Heat a medium-sized pot over medium-high heat and add the sugar. Stir continuously with the heatproof spatula until the sugar is completely dissolved and turns a golden amber colour.
Quickly add the cubed butter to the melted sugar and mix until fully incorporated. If the butter separates from the sugar, remove from heat, vigorously whisk until smooth, and then return to the heat.
While stirring constantly, carefully drizzle the heavy cream into the sugar mixture until fully combined.
Allow the caramel to boil for 1 minute without stirring.
Remove the pot from the heat, add the salt, and whisk to combine.
Let the caramel cool to room temperature before storing in the refrigerator or freezer.
